Tagwood BBQ Argentine Santa Maria Wood Fire & Charcoal Gaucho Grill - Black Steel - BBQ03SI

Tagwood's original Santa Maria in heavy black steel. 714 square inches of live-fire cooking, a firebrick brasero, a crank-elevated grate, and every surface that touches food in 304 stainless.

Key Features

  • Cook by feel, not by dial: Turn the crank wheel and the 34-inch main grate rises or falls over the coals. Low for a hard sear, high for a slow roast, anywhere in between with one hand.
  • The brasero does the hard work: Burn hardwood or lump charcoal down to embers in the firebrick-lined side firebox, then rake them under the grate exactly where you want heat. Clean fire, no flare-ups, no waiting.
  • Four ways to cook at once: Main grate, secondary grate over the brasero, interchangeable griddle, and S-shaped meat hooks for hanging asado-style.
  • 1/8-inch heavy steel body: Cold-rolled steel in a heat-resistant black finish, with grates, griddle, hooks, and tools in 304 stainless.
  • Firebricks where the fire lives: The base and side wall of the brasero are lined with refractory brick that holds heat, spreads it evenly, and protects the steel.
  • Details that matter at 9 PM: Built-in bottle opener, stainless shovel and coal rake on their own bracket, drain system so rain never pools in the firebox, four swivel casters with brakes.
  • Ships partially assembled: The grill body arrives complete; you attach the cart, wheels, and side table.

The Asado Experience

There is a reason Argentine families build their Sundays around the grill. An asado is not a meal you cook and serve; it is an afternoon you host. The fire gets lit at noon. Friends arrive with wine. Someone tends the embers, someone slices chorizo off the hook, and the cook is never alone at the grill because the grill is where everyone wants to stand.

The Tagwood BBQ03SI is built for that. It has no lid to close and walk away from. The fire is visible, the grate is at eye level, and the crank wheel is an invitation for whoever is standing closest. It turns cooking dinner into the reason people came over.

How You Cook On It

Start the fire in the brasero, the firebrick-lined box on the right. A few splits of quebracho, oak, or hickory, or a chimney of lump charcoal. In twenty minutes you have a bed of glowing embers with no flame. Shovel them under the main grate and spread them: a thick bed on the left for searing, a thin scatter on the right for finishing.

Now the crank wheel. Drop the grate to two inches above the coals and lay a picanha fat-side down; the round-bar grate lets the fat roll off toward the drain instead of pooling and flaring. Raise it to eight inches and put a rack of short ribs on to render slowly in radiant heat for two hours. The height is the thermostat.

While the ribs go, the secondary grate sits directly over the brasero, the hottest spot on the grill. That's where provoleta goes to blister, where bread gets char, where a chorizo gets its snap. Swap the round grate for the griddle and you have a plancha for vegetables, shrimp, or eggs the next morning. Hang a whole chicken or a string of sausages from the S-hooks and let the rising heat do the work.

Built Like A Tank

The BBQ03SI's body is 1/8-inch cold-rolled steel in a heat-resistant black finish, the traditional look of a working Argentine parrilla. Every surface that touches food, the grates, griddle, hooks, shovel, and rake, is 304 stainless steel. The firebox is lined with refractory firebrick on the base and side wall, storing heat like a pizza oven and shielding the steel from direct flame.

At 400 pounds it is the heaviest grill in its class. Like any painted-steel grill, the body will develop patina and surface oxidation over time, especially around the firebox. That's the nature of the material, not a defect, and many owners prefer the look. A light sanding and a coat of high-temperature paint once a season keeps it sharp. If you'd rather never think about it, the BBQ03SS is the same grill in all stainless.

See It In Action

Which Tagwood Is Right For You?

  • BBQ03SI: This one. Heavy black steel body, the best value in a full-size Santa Maria.
  • BBQ03SS: Same grill in all 304 stainless. No repainting, ever.
  • BBQ18SI Chief: Smaller, simpler black-steel grill with two preset grate heights instead of a crank. $1,450 less.
  • BBQ23SS XL: The same width, ten inches deeper, 1,117 square inches, all stainless.

Questions Asadores Ask

Will it rust? The black steel body will develop surface patina over time, especially near the firebox. It doesn't affect performance; sand lightly and touch up with high-temp paint. All food-contact parts are 304 stainless and will not rust.

What wood should I burn? Any dense hardwood: oak, hickory, mesquite, or the traditional Argentine quebracho. Lump charcoal works too. Avoid softwoods and anything treated.

How long until I'm cooking? About twenty minutes from lighting the brasero to a working bed of embers.

How much assembly? The grill body arrives assembled. You attach the cart legs, casters, and side table, roughly an hour with two people.

How many people can it feed? The 34" x 16 1/2" main grate holds eight to ten large steaks or two full racks of ribs at once. With the secondary grate and hooks working, comfortably a party of twelve to fifteen.
