Charcoal Ovens

In short

A charcoal oven is an enclosed steel chamber that burns charcoal or wood inside it, so you grill, roast and bake in the same box with a door shut. It cooks faster and uses less fuel than an open grill, and it is the oven behind the steak at most live-fire restaurants.

Charcoal ovens are how restaurant kitchens get live fire flavor with oven control. Close the door, open the airflow lever, and a charcoal oven runs at 500 to 900°F on a single load of coal. Grill a ribeye on the top rack, roast vegetables on the lower one, and bake bread as the fire dies back. The ones below are built for a backyard or a bar at home, in 304 stainless and heavy carbon steel, and they ship free.

Charcoal Ovens for Home: What You Get

Every charcoal oven on this page shares the design that Spanish and Argentine makers perfected for restaurant cooking. A firebox at the base holds the charcoal or wood. Two cooking levels sit above it, usually a grill grate and a flat rack or tray. A front door seals the chamber; a lever under the fire controls airflow; a chimney with its own damper controls the draw. Shut everything down and the coals go dormant for the next cook. Open everything and you have a 900°F broiler.

  • Tagwood TAG01 and TAG02 — 304 stainless Argentine charcoal oven fire grills, 29" and 35" wide, two cooking levels, airflow lever, chimney, grease and ash trays. Countertop or on a matching base cabinet with storage drawers. $6,000 to $11,500.
  • Sunterra Vault 36" — insulated carbon steel wood and charcoal oven with a grill on top, two cooking zones, built-in or on a cart. Made in Texas. $3,000 to $4,000.

Charcoal Oven vs Charcoal Grill

A charcoal grill cooks over an open fire; heat leaves as fast as it is made, and you feed the fire all afternoon. A charcoal oven traps that heat. The chamber acts like a convection oven and a broiler at once, so a steak sears from below and roasts from above, and a load of coal that lasts two hours in a grill lasts six in an oven. Food comes out with the char of charcoal grilling and the even doneness of an oven, which is why chefs call the result “charcoal broiler” cooking.

How a Charcoal Oven Cooks

Light a chimney of lump charcoal or a few splits of oak, load the firebox, and shut the door. In 30 to 40 minutes the chamber is at temperature. Airflow is the thermostat: lever open and chimney open for searing, both cut back for roasting at 400°F, nearly closed to hold a low heat for bread or a slow pork shoulder. The fire is small and the walls are hot, so wood burning in a charcoal oven gives clean smoke rather than the heavy smoke of an open pit. Grease drops to a tray, ash to a drawer; cleanup is five minutes.

Tagwood vs Josper, Kopa and Mibrasa

Josper ovens, Kopa and Mibrasa are the names restaurant buyers know, and they are superb equipment, built for commercial kitchens at $10,000 to $20,000 and sold through restaurant supply. The Tagwood and Sunterra charcoal ovens here use the same enclosed-firebox, two-level, airflow-lever design, in residential sizes, at residential prices, with free shipping and a dealer who answers the phone. If you want the restaurant result on a worktop or a patio at home, this is the way most people get there.

Choosing a Charcoal Oven

  • Width: 29" feeds a family and guests; 35" or 36" feeds a party or a small restaurant.
  • Steel: 304 stainless for a stainless outdoor kitchen or coastal air; insulated carbon steel for a built-in with a stone surround.
  • Levels: two is standard; look for removable racks and trays so you can run a grate and a roasting pan at once.
  • Controls: an airflow lever and a chimney damper are what make it an oven rather than a box.
  • Where it lives: countertop on a non-combustible surface, on a base cabinet, or built into an island. Under a roof, plan a hood or vent the chimney outside.

Charcoal Oven FAQ

Can I use a charcoal oven for home cooking, not just a restaurant?

Yes. The ovens here are sized and priced for home outdoor kitchens. They burn the same lump charcoal you already buy and run three to six hours on one load.

What is the difference between a charcoal oven and a pizza oven?

A pizza oven is a dome that bakes on a stone floor with the fire beside the food. A charcoal oven has a firebox under racks and a door, so it grills and broils as well as bakes.

Do charcoal ovens smoke a lot?

Less than an open grill. The fire is small and enclosed. Outdoors they need no hood; under a roof, vent the chimney.

Is a charcoal oven the same as a Josper?

Josper is a brand that popularized the design. Tagwood and Sunterra build charcoal ovens on the same principle for home use.

Charcoal ovens are part of our wood fired grills collection, alongside Argentine grills and Santa Maria grills. Free shipping, free outdoor kitchen design, and the owner answers at 888-678-3530.
