Sunterra Santa Maria Grills

The Sunterra Santa Maria grill is the Central Coast design done in 3/16-inch steel: one open firebox under a flat grate, ceramic firebrick on the floor and walls, and a chain-drive crank that lifts the grate from searing height to roasting height while the oak burns. Single grate for one fire, split grate for two heats at once. Sunterra Argentine Grills

Sunterra’s Argentine grills add the brasero: a wood-burning firebox that makes embers you rake under the grate, so the food cooks over coals and never over flame. The Rear Brasero puts the firebox behind the grate for a compact footprint; the Side Brasero puts it beside the grate for easier raking and a longer cooking surface. Fire, Fuel, Rubs and Sauces: Cooking on a Sunterra

Red oak is the traditional Santa Maria fuel and quebracho the Argentine one; lump charcoal with a split of oak is the everyday answer for both. The firebrick holds heat so a modest fire does the work, and the crank does the rest. Seasoning is simple by tradition: coarse salt, black pepper and garlic for Santa Maria, salt alone for asado, with rubs and sauces on the table rather than the grill. Beef is the center of both styles, but a split grate runs vegetables, chicken and fish on one side while tri-tip or ribs roast on the other.
