Stainless Steel, Carbon Steel or Cast Iron Plates

The plate decides how a griddle cooks and how much care it needs.

• Thick stainless steel: Twin Eagles, Fire Magic, Alfresco and Summerset use solid stainless plates from 5/16 to 1/2 inch. They resist rust, hold heat well and clean up like stainless cookware.
• Stainless over cast iron: Le Griddle layers stainless on a cast iron core. The iron core spreads heat evenly, and the stainless top will not rust like bare cast iron cookware.
• Carbon steel: most low-cost griddles use a carbon steel plate. Carbon steel seasons to a dark, slick finish, but it rusts if you skip the oil or leave it uncovered.

For a home island that sits outside all year, a stainless or stainless-clad plate is the easier choice. A carbon steel plate suits a cook who likes to season and does not mind upkeep.
